ingredients

  • 1 (15 ounce) can coconut cream, refrigerated overnight
  • 1 cup raw cashews, soaked 2 hours
  • 1/4 cup maple syrup
  • 2 tablespoons coconut oil
  • 1/2 teaspoon vanilla extract
  • Pink pataya powder
  • Blue spirulina powder

Method

  • Step 1

    Scoop out the hardened coconut cream from the top of the can and add it to your Vitamix along with the cashews (drained + rinsed), maple syrup and vanilla. Blend until smooth, then divide in two.

  • Step 2

    Add pink pitaya powder to one half and blue spirulina to the other half. Pour one colour into a freezer-safe container lined with parchment paper, then top with second colour, swirling a bit. Freeze, removing from freezer every 30 minutes for first 1-2 hours to stir quickly. ENJOY!
