ingredients

  • 1/4 cup almond flour
  • 2 tablespoon cocoa powder
  • 2 tablespoon sugar (can sub in keto sweetener for a keto mug cake)
  • 1 tablespoon coconut oil or grapeseed oil
  • 1 teaspoon vanilla extract
  • 1 egg
  • 1 Ghirardelli Milk Chocolate Caramel Square
  • 2 - 3 mini marshmallows

Method

  • Step 1

    Add almond flour, cocoa and sugar to a bowl and mix well.

  • Step 2

    Then, melt the coconut oil (if using grapeseed oil, skip this step) by placing it in a microwave safe dish and microwaving it for 10 seconds - make sure it's not hot but warm.

  • Step 3

    Add the melted coconut oil/grapeseed oil, vanilla extract and egg to the almond flour, cocoa and sugar mix and mix well.

  • Step 4

    Break up a Ghirardelli Milk Chocolate Caramel Square and add it into the mix. Also add in the mini marshmallows.

  • Step 5

    Grease the cup/mug you will be using with coconut oil or grapeseed oil. Then, pour mug cake mix into the greased cup/mug.

  • Step 6

    Place in microwave and microwave on high for 60 seconds. Enjoy warm as is, or top it with more Ghirardelli Milk Chocolate Caramel Squares and fruit or with ice cream and Ghirardelli Milk Chocolate Caramel Squares and fruit.
