ingredients

  • 1 tablespoon olive oil
  • 1/2 small sweet onion, minced
  • 1/4 teaspoon red pepper flakes, more as desired
  • 1/2 teaspoon ground cumin
  • 1 28-ounce can Muir Glen Diced Tomatoes, drained
  • 1/2 cup strawberry jam
  • 2 tablespoons orange zest
  • 3 tablespoons red wine
  • 3 tablespoons balsamic vinegar
  • pinch of salt

Method

  • Step 1

    Heat olive oil in a medium sauce over medium-high heat. Add onions and saute for 1-2 minutes until the onions soften. Add the cumin and red pepper flakes.

  • Step 2

    Add the remaining ingredients. Stirring occasionally, cook the mixture for 10-12 minutes until the liquid reduces and the mixture thickens. Add a pinch of salt or more to taste.

  • Step 3

    Serve warm or at room temperature. Allow the compote to cool completely before storing. The compote can be stored in an airtight container in the refrigerator for up to two weeks.
