Indian-Spiced Curried Spinach

ingredients

  • 2 tablespoons vegetable oil, divided
  • 9 ounces spinach
  • 1 small chopped onion
  • 2 teaspoons grated ginger
  • 2 teaspoons grated garlic
  • 1 teaspoon red chili powder
  • 2 teaspoons cumin powder
  • 1 tablespoon coriander powder
  • 1 teaspoon dried fenugreek leaves (Kasuri methi)
  • 1 finely chopped tomato
  • 1 tablespoon butter

Method

  • Step 1

    Heat 1 tablespoon vegetable oil. Sauté spinach until it wilts and starts to release water. Remove from pan and keep aside.

  • Step 2

    Heat the remaining tablespoon of vegetable oil in the pan. Sauté onions until translucent, 4-5 minutes. Add ginger and garlic paste. Sauté for about 3 minutes.

  • Step 3

    Add turmeric, red chili powder, cumin powder, coriander powder and chopped tomato. Add a splash of water into the pan to prevent the spices from burning. Cook until tomato becomes soft, about 5 minutes.

  • Step 4

    Add the sautéd spinach back into the pan and season with salt. Sauté on high heat.

  • Step 5

    Slightly crush the kasuri methi on the palm of your hands. Add to the spinach. Turn the heat off.

  • Step 6

    Add the dollop of butter. Let it melt into the spinach. Mix and serve with some rice.
