Crunchy Fried Okra

"Kurkure means crispy in Hindi. Besan or gram flour is a flour of chana dal or split brown chickpeas. This is a simple dish but tastes like you’ve spent a lot of time making it. Okra is cut into strips and marinated with a dry spice rub and then flash fried to create this delicious crunchy savory snack."

ingredients

  • 1 pound okra
  • Salt, to taste
  • 1 tablespoon turmeric
  • 2 teaspoon lemon juice
  • 1 tablespoon coriander powder
  • 1 tablespoon cumin powder
  • 1 tablespoon red chili powder
  • 1 teaspoon fennel seeds powder
  • 1 teaspoon carom seeds powder
  • 2 teaspoons Garam Masala powder
  • 2 teaspoons dreid mango powder
  • 1 tablespoon chaat masala
  • 1/2 cup gram flour
  • 2 tablespoons rice flour
  • Oil for frying

Method

  • Step 1

    Wash okra clean. Pat gently with a kitchen towel. Cut each okra into four horizontal strips.

  • Step 2

    In a bowl mix salt, turmeric, red chili powder, cumin powder, coriander powder, fennel powder, carom powder, garam masala powder, chaat masala, dried mango powder and lemon juice.

  • Step 3

    Sprinkle gram flour and rice flour on the okra. Let this sit aside for an hour. The okra should release some water and become a little moist and adhere to the masala.

  • Step 4

    Heat oil. Fry okra on a medium flame in batches. Drain on kitchen towel. Serve immediately.
