ingredients
- 16 ounces pasta
- 2 tablespoon olive oil
- 8 ounces sliced Baby Bella mushrooms
- 5 ounces Baby Spinach
- 1 tsp Chinese Five Spice powder
- 2 tablespoon garlic
- 1 tablespoon red pepper flakes
- 1 cup cut in halves Sangria Tomato Medley
- 1 can Small Fava beans
- 1 cut into cubes small English cucumber
- 1 tablespoon lemon juice
- 1 tablespoon cilantro
- sea salt
- 1 tablespoon crushed black peppercorns
Method
Step 1
Cook pasta according to box directions.
Step 2
For the Fava Beans Salad: Mix rinsed beans with chopped cucumber, 1 tbsp garlic, 1 tbsp olive oil, salt, pepper, lemon juice and cilantro. Keep aside.
Step 3
For the pasta: Heat 1 tbsp olive oil in a cast iron pan. Add 1 tbsp chopped garlic and red pepper flakes. Cook for a couple of seconds. Add mushrooms, sauté for a minute. Add halved tomatoes, five spice powder, and baby spinach. Mix in cooked pasta. Cook for a minute. Turn the heat off.
Step 4
Serve pasta with salad.
