Bulgur Wheat and Beet Salad

  • 2 tablespoons olive oil
  • 1 small red onion, chopped
  • 2 beets, boiled and grated
  • 1 cup coarse bulgur wheat
  • 2 1/2 cups vegetable stock
  • 2 teaspoons black pepper
  • 1/2 lemon, juiced
  • 3 tablespoons feta cheese, crumbled
  • freshly torn mint


  • Step 1

    In a large pan, heat oil on medium heat. Sauté onions until translucent, 4-5 minutes. Add bulgur wheat and cook for a minute or two. Add the grated beets. Add vegetable stock and pepper. Cover and cook until the bulgur wheat is soft, about 20 minutes. Let it rest after it has cooked for 10 mins for any additional liquid to be soaked into the grains.

  • Step 2

    Squeeze fresh lemon juice on the cooked wheat and mix.

  • Step 3

    Transfer to a serving platter and top with crumbled feta cheese and mint leaves.
