- 1 packet angel hair pasta
- 3 tablespoon extra virgin olive oil
- 3 tablespoon chopped garlic
- 1 tablespoon crushed black pepper
- 3 tablespoon tomato paste
- 1 tablespoon dried thyme
- 1 cup grated parmesan
- 1 tub vine tomatoes
Cook angel hair pasta according to package directions. Reserve ½ cup of pasta water and drain the rest.
In a pan heat 2 tbsp olive oil. Put 3 tbsp chopped garlic and stir fry for a minute taking care not to burn the garlic. Add 1 heaped tbsp crushed black pepper, and 3 tbsp tomato paste. Cook a couple of mins.
Add cooked pasta along with the reserved pasta water. Sprinkle thyme and freshly grated parmesan cheese.
In a cast iron pan heat 1 tbsp olive oil and let the vine tomatoes cook a couple of mins till they sizzle. Serve the tomatoes on top of the pasta. Enjoy!
