Muffin Ingredients

  • 3/4 cup pumpkin purée
  • 2 tabelspoons brewed chai tea
  • 2 tablepoons milk
  • 1/3 cup butter, melted
  • 1 egg
  • 1 cup sugar
  • 1 teaspoon vanilla extract
  • 1 teaspoon cinnamon
  • 1 1/2 cups flour
  • 1 1/2 teaspoons baking powder

Streusel Ingredients

  • 3 tablepoons brown sugar
  • 1/4 cup flour
  • 1/4 cup oats
  • 4 tabelspoons cold and cut into cubes butter

Chai Glaze Ingredients

  • 1 cup powdered sugar
  • 2 tabelspoons brewed chai tea

Method

  • Step 1

    Preheat your oven to 350 degrees and line your muffin tin. (This recipe makes 12 muffins).

  • Step 2

    In a large bowl, combine the pumpkin purée, 2 tbsp of the strong brewed chai tea, 2 tbsp milk, melted butter, egg, sugar, vanilla extract, and cinnamon. Then, stir in the flour and baking powder until just combined.

  • Step 3

    To make the streusel topping, place the brown sugar, flour, oats, and sliced cold butter in a small bowl. Use a fork to combine the mixture into small crumbs.

  • Step 4

    Fill each of your muffin cups about 3/4 full of batter. Then, top each one with a rounded tablespoon of the streusel mixture.

  • Step 5

    Bake for 25 minutes. Meanwhile, make the glaze by combining the powdered sugar with 2 tbsp of the strong chai tea in a small bowl. Set aside.

  • Step 6

    When your muffins are baked, a toothpick inserted into the center should come out mostly clean. Remove them from the oven and set them on a wire rack to cool completely. Once cooled, drizzle the glaze on top of each one and enjoy!
