ingredients
- 1/2 cup softened butter
- 1/3 cup sugar
- 1/3 cup lemon zest
- 1/4 teaspoon almond extract
- 1 cup flour
- 1/4 cup mixed berry jam
- 1/2 cup powdered sugar
- 1 tablespoon lemon juice
Method
Step 1
In a large bowl, blend together the softened butter, sugar, lemon zest, and almond extract.
Step 2
Add in the flour a little bit at a time, blending after each addition. Cover the dough, and place it in the refrigerator to chill for 1 hour.
Step 3
Once the dough is chilled, preheat your oven to 350 degrees. Roll out the dough into fourteen 1 in balls, and place them on an un-greased baking sheet - about 1 in apart.
Step 4
Use the handle of a wooden spoon - or the bottom of a 1/2 in measuring spoon to indent the center of each of your cookies. Fill in the indents with jam.
Step 5
Place your cookies in the oven to bake for 14 min. Once baked, remove them from the oven, and place on a wire rack to cool.
Step 6
In the meantime, make the glaze by stirring together the lemon juice and powdered sugar. Once the cookies are cooled use a spoon to drizzle the glaze on each one and enjoy!
