Chewy Chocolate Chip Cookies

"I am currently sitting on a bench, waiting for my son to finish his soccer training. Scrolling my phone pics was SO not a good idea, 'cause I found this and now all I can think of is chocolate chip cookies. But (and this is a huuuuuge "but") yesterday I tested a fantastic pizza recipe literally perfect for almost everyone. Even if you work and have a little time to cook, you can make it (almost no knead) days ahead and store in the fridge for up to 4 days. All I need now is to make it another time just, you know.... double check. Believe me, you have to stay tuned: a life changer is coming!"

ingredients

  • 85 grams granulated sugar
  • 130 grams dark brown sugar
  • 1 pinch of kosher salt
  • 100 grams melted butter
  • 1 egg
  • 1 teaspoon vanilla extract
  • 180 grams all purpose flour
  • 1 teaspoon baking soda
  • 110 grams dark chocolate , big chunks
  • 110 grams milk chocolate, big chunks

Method

  • Step 1

    Whisk together both sugars and butter. Add the vanilla extract and egg.

  • Step 2

    In a side bowl, sift flour, salt and baking soda, then add it to the wet mixture (using a wooden spoon). Add the chocolates chunks.

  • Step 3

    Let the dough rest in the fridge for a couple of hours. Preheat the oven to 180°C (356°F)

  • Step 4

    Using an ice cream scoop make the cookies, leaving a big space between them because they'll spread. Bake for 12-14 minutes.

  • Step 5

    Let them cool on wire rack. Enjoy once cooled.
