For the French Toast
- 1 egg
- 3-4 tablespoons dairy-free hazelnut creamer
- 1/4 teaspoon cinnamon
- splash of vanilla extract
- 6 slices bread
- 1-2 teaspoons butter, or ghee
For the Caramelized Banana
- 1 banana
- 2 teaspoons vanilla bean ghee
- 1-2 teaspoons honey
- a dash of cinnamon
To make the French toast: in a bowl, combine the egg, creamer, vanilla extract and cinnamon. several shakes of cinnamon. Heat the butter or ghee in a frying pan. While it's heating, dunk the bread in egg mixture. Place bread slices in the pan and cook about 2 minutes per side, until slighlty brown.
To make the caramelized bananas: heat the ghee in a frying pan. Once warm, add a drizzle of honey and dash of cinnamon. Add the bananas and cook until golden, about 1-2 minutes. Serve with a dollop of Greek yogurt if desired.
