For the Salad
ingredients
- 6 sliced Peaches
- 8 quartered Figs
- 20 halved Cherry Tomatoes
- 1 thinly sliced Red Onion
- 4 thinly sliced Shallots
- 1 Handful Feta Crumbs
- 1 Handful Pistachios
- 1 Handful Basil Leaves
For the Dressing
ingredients
- 2 tablespoon Balsamic Vinegar
- 2 teaspoon Honey
- 2 teaspoon Mustard
- 2 tablespoon Olive Oil
- Black Pepper
- Lemon Zest
Method
Step 1
Pretty basic stuff once you’ve sliced everything. Combine the balsamic vinegar, honey, mustard, and olive oil and mix in a bowl to make the dressing. Add seasoning and lemon zest to taste - it should be tart and a bit sour.
Step 2
Quickly fry the shallot in a skillet with a bit of olive oil, black pepper, and a tablespoon of balsamic vinegar at the end.
Step 3
Assemble! Place everything on four plates or just make one large salad bowl. Add feta last. Drizzle over the dressing and enjoy.
