Crescent Moon Banana Bread

RECIPE:
1 cup gluten-free oat flour
1 teaspoon baking powder
1 teaspoon baking soda
1/2 teaspoon salt
1 teaspoon ground cinnamon
1/2 cup gluten-free oats
3 ripe bananas
1/3 cup honey or maple syrup
1/2 cup extra virgin olive oil
1/4 cup unsweetened almond milk
1 teaspoon pure vanilla extract
2 eggs
granulated sugar for sprinkling on top, optional
1 extra half slice of banana for top, optional
Preheat oven to 350 degrees Fahrenheit.
Grease a loaf pan with oil.
In a medium bowl, combine dry ingredients.
In a large bowl, mix bananas, honey, and olive oil with an electric hand mixer until mostly smooth. Add almond milk, vanilla, and eggs and mix again until incorporated.
Add dry ingredients to the wet mixture and stir to combine.
Pour batter into prepared pan. If using extra banana for the top, bake batter initially for 10 minutes.
Then remove pan from oven, lay banana slice on top, sprinkle with sugar.
Bake for 55-65 minutes more or until a toothpick comes out clean.
Allow bread to cool in pan on wire rack.
