ingredients
- 300 gram apple compote
- 240 milliliter coconut cream
- 350 gram sugar powder
- 160 milliliter coconut oil
- 130 gram rice flour
- 130 gram corn starch
- 70 cocoa powder
- 10 gram baking powder
- 90 milliliter coconut milk
- 15 milliliter coffee
- 3 gram salt
- 400 milliliter coconut milk full can
- 150 gram dark chocolate 70%
- 5 gram salt
Method
Step 1
Oil and flour three 15cm round pans
Step 2
In the bowl of stand mixer, mix the compote with the cream, the vegetable milk and the oil.
Step 3
Once you obtain a relatively homogeneous mixture, add the sugar and salt.
Step 4
Add the sifted flour and cocoa.
Step 5
Once the ingredients are incorporated, divide into 3 equal parts and pour into 15cm round pan.
Step 6
Bake at 180°C for about 30 - 40 minutes (up to 50 minutes to an hour if you do it all at once) depending on the thickness, and leave to cool. For cutting, wait until the cake has cooled completely.
Step 7
For the ganache :

The day before, put the coconut milk in the fridge for at least 12 hours.
Step 9
Melt the chocolate and add salt in a bain marie. Let cool
Step 10
Take only the cream from can and whip it in a stand mixer, once it has doubled in volume incorporate the chocolate on top.
Step 11
Whip until completely incorporated.

For the Assembly :

Cut out the hump of the cake cake (if there is one) and Cover the first cake layer with the coffee ( SOAK your cake layers with the coffee. Don’t just brush it on, use a spoon to and slowly add all the coffee to the three layers) and add chocolate ganache on top. Repeat the process with the other layers until the cake is assembled.
Step 14
Cover the cake with more chocolate ganache then smooth the top and side. (You can use piping bag for helping)

Enjoy with an espresso or some berries !
