"Good morning & happy Friday! Sending my brother off this morning with some pumpkin trail mix breakfast cookies to keep him and his friends fueled on their hiking/camping trip I might not be a camper, but I’m a good sister."

ingredients

  • 11 ounces unsweetened pumpkin puree
  • 2 tablespoon coconut oil
  • 1/2 cup maple syrup
  • 1/2 teaspoon vanilla extract
  • *optional: 2 tbs coconut sugar if you want it sweeter
  • 1 1/2 cups oats
  • 1/2 cup oat flour 
  • 4 tablespoon gf flour
  • 1 1/2 teaspoon baking powder
  • 1/2 teaspoon pink salt 
  • 1 teaspoon cinnamon 
  • 1 teaspoon pumpkin pie spice
  • 1/2 cup rasins
  • 2 tablespoon pepitas
  • 3 ounces white chocolate

Method

  • Step 1

    Preheat oven at 350 degrees F.

  • Step 2

    Combine the wet ingredients in a bowl. In a separate bowl, stir together your dry ingredients.

  • Step 3

    Slowly add the dry ingredients to the wet until incorporated. Stir in the the raisins, pepitas and chopped white chocolate by hand.

  • Step 4

    Refrigerate the dough for about 30 minutes and then scoop out large balls of dough and bake for 12-15 minutes! Since these are breakfast cookies to be eaten on the trail, I like them HUGE, but feel free to size them as you please.
