Granola Base:
ingredients
- 1 cup (120 grams) granola (of your choice)
- 1/4 cup (60 grams) peanut butter (or any nut/seed butter)
- 3 tablespoons maple syrup (use sugar-free if preferred)
Chocolate Topping:
ingredients
- 1 cup dairy-free chocolate, melted
- 2 tablespoons peanut butter
- 3 tablespoons chocolate protein powder (optional)
For Swirling:
ingredients
- 6 teaspoons peanut butter
Method
Step 1
Line a muffin tin with 6 liners or a small container (approximately 12x12 cm) with parchment paper.
Step 2
In a bowl, mix granola, peanut butter, and maple syrup until the mixture is sticky and holds together. Divide evenly among the muffin liners, pressing down firmly to create a base layer.
Step 3
Melt the chocolate in a microwave-safe bowl or over a double boiler. Stir in the peanut butter until smooth. If using protein powder, add it now and mix until fully combined.
Step 4
Spoon the chocolate mixture over the granola base, ensuring an even layer.
Step 5
Add 1 teaspoon of peanut butter on top of each cup and use a toothpick to swirl it into the chocolate layer for a decorative touch.
Step 6
Place the cups in the freezer for 30 minutes, or until the chocolate layer is firm.
Step 7
Once set, remove the cups from the liners and enjoy cold. Store leftovers in an airtight container in the fridge for up to 2 weeks.
