ingredients
- 1 diced yellow squash
- 1 diced zucchini
- 1/4 cup diced red onion
- 1 diced orange bell pepper
- 1 handful of chopped asparagus
- 20 deveined, peeled and tail off small shrimp
- 1 chopped polska kielbasa sausage
- 2 tablespoon olive oil
- 2 teaspoon chili powder
- 1 teaspoon turmeric
- 1 teaspoon cumin
- 2 tablespoon mesquite seasoning
- 1 teaspoon smoked paprika
- 1 tablespoon minced garlic
- 8 ounces ziti pasta noodles
Method
Step 1
In a large bowl, add all of the ingredients– all of it– olive oil, veggies, shrimp and sausage, seasonings. The only thing that you should keep out are the noodles.
Step 2
In a large pot, boil water and cook the noodles until tender. Drain.
Step 3
In a large skillet, add the tossed veggies, shrimp and sausage (not the noodles) and sauté on medium-high heat until everything is cooked nicely. Be careful so you don’t overcook the shrimp.
Step 4
Add in the noodles and stir.
Step 5
Cook for an extra few minutes.
Step 6
Serve immediately with baked french bread. I like to melt a little bit of butter and sprinkle parsley on top.
