Spaghetti Carbonara

(1)
"This recipe is not the traditional Italian carbonara, as in the U.S. guanciale isn’t in most stores. But this has a good amount of garlic, bacon and of course loads of Parmesan cheese."

ingredients

  • 1 package Spaghetti
  • 2 large Eggs
  • 1/2 cups grated fine Parmesan Cheese
  • 4 sliced of chopped Applewood Smoked Bacon
  • 2 clove, minced Garlic
  • 2 tablespoons fresh Parsley
  • 1/2 teaspoon Salt
  • 1/2 teaspoon Pepper

Method

  • Step 1

In a large pot of boiling salted water, cook pasta according to package instructions; reserve 1/2 cup water and drain well. In a separate bowl, whisk together eggs and Parmesan; set aside. Heat a large skillet over medium high heat. Add bacon and cook until brown and crispy, reserve excess fat. Stir in garlic until fragrant, about 1 minute. Reduce heat to low. Quickly and gently toss all ingredients together; season with salt and pepper, to taste. Add reserved pasta water, one tablespoon at a time, until desired consistency is reached. Serve immediately, top with parsley and enjoy!
