Summer is right around the corner, heat waves are rolling in, and we're begging for a fresh summer salad like this! Spend the day outside grilling and throw this refreshing summer salad together!

ingredients

  • 1/2 cup olive oil
  • 1/3 cup champagne vinegar
  • 1 teaspoon kosher salt
  • 1 green Thai chile, finely chopped
  • 1 clove garlic, finely grated
  • 1/2 honeydew melon, peeled, seeded and cut into 1” pieces
  • 2 Persian Cucumbers, thinly sliced
  • 4 medium red radishes, quartered and sliced
  • 1/2 cup toasted and shelled pistachios
  • 1/2 cup mint leaves

Method

  • Step 1

    Whisk oil, vinegar, salt, chile and garlic together in a liquid measuring cup until dressing is completely combined.

  • Step 2

    Toss honeydew, cucumber, radishes, pistachio and mint together in a large bowl. Add dressing and toss to coat. Let sit 5 minutes to let flavors meld.

  • Step 3

    Transfer to a large platter and serve.
