Scrambled Mozzarella Eggs with Avocado Toast

  • 1 slice bread
  • 1/ 2 tablespoon butter
  • 2 large eggs
  • 2 tablespoon shredded mozzarella
  • 1/ 2 avocado
  • 1 teaspoon olive oil
  • pinch of course sea salt
  • pinch of red pepper flakes
  • 1/ 2 cup arugula


  • Step 1

    Place the bread in a toaster. Toast until crispy.

  • Step 2

    Meanwhile, prepare a skillet on the stove over medium-low heat. Add the butter to the pan and move around until melted.

  • Step 3

    While the butter melts, whisk the eggs, with a pinch of salt. Pour onto the heated pan and move around with a spatula until halfway cooked through.

  • Step 4

    Sprinkle the shredded mozzarella over the eggs and mix. Cook for another 1-2 minutes. Then, transfer to a plate/bowl.

  • Step 5

    In a small bowl, mash the avocado with olive oil and a pinch of salt.

  • Step 6

    Spread the avocado over the toast and sprinkle with red pepper flakes.

  • Step 7

    Arrange on your plate, the eggs, avocado toast, and arugula. Enjoy.
