Meatless Monday doesn't always have to be pasta and salads. Change things up and try this easy One Pot Cheesy Lentils, Black Beans and Rice. So much protein and flavor, you won't go to bed hungry with this dinner! -@reciperunner

  • 1/2 of a yellow onion, diced
  • 1 clove garlic, minced
  • 1/2 cup uncooked long grain brown rice
  • 1/2 cup uncooked French green lentils, rinsed
  • 2-3 cups low sodium vegetable stock
  • 1 teaspoon chili powder
  • 1/2 teaspoon ground cumin
  • 1/4 teaspoon ground chipotle powder (optional)
  • Kosher salt and fresh ground black pepper to taste
  • 15 ounces black beans, rinsed and drained
  • 1/5 cup fire roasted tomatoes, drained
  • 4 ounces diced green chiles
  • 1 small zucchini, shredded
  • 1/2 cup defrosted frozen corn
  • 1 cup red enchilada sauce
  • 1/4 cup shredded cheese, I used sharp cheddar and part skim mozzarella
  • Cilantro for garnish (optional)
