Pickled Sesame Cucumbers

ingredients

  • 5 small seedless cucumbers, sliced in ⅛-¼ inch slices
  • 1/4 cup thinly sliced red onion
  • 2 teaspoons rice vinegar
  • 1 teaspoon sesame oil
  • 1 teaspoon honey
  • 1/4 teaspoon red pepper flakes
  • To Taste Salt
  • Sesame seeds, for garnish

Method

  • Step 1

    Add cucumbers and red onion to a medium bowl.

  • Step 2

    In a small bowl whisk together the rice vinegar, sesame oil, honey, red pepper flakes, and salt. Taste and add more salt if necessary. Pour dressing over cucumbers and onion and toss to combine.

  • Step 3

    Refrigerate for at least 30 minutes before consuming. Best consumed within 3-4 days.
