For the Ice Cream Layers
ingredients
- 2 cups raw cashews
- 1/2 cup coconut sugar
- 2 tablespoons cacao powder
- 1 tablespoon coconut oil
- 1/2 teaspoon vanilla bean paste
- 1 cup full fat coconut milk
For the Cherry Layer
ingredients
- 1 cup dried, fresh or frozen cherries
- 10 Medjool dates
- 2 tablespoons rice malt syrup
- 1/2 cup shredded coconut
- 1 cup vegan chocolate chips, melted
To Make the Ice Cream Layer
Method
Step 1
Blend all ingredients in a high-speed blender until smooth. Once smooth and creamy pour half the mixture into a lined rectangular tray. Place in freezer for about 1 hour. Set the other half aside while you make the cherry layer.
To Make the Cherry Layer
Step 1
Blend all ingredients together until smooth. Dried cherries work best. The texture will be slightly different depending on the type of cherries you use.
To Assemble the Bars
Step 1
Remove base from freezer, spread cherry layer over the base, then pour remaining chocolate ice cream mixture over the top & freeze overnight.
Step 2
Once set, slice into bite size bars, coat in the melted chocolate and enjoy! Best kept frozen.
