Pitaya Coconut Ice Cream

Pitaya Coconut Ice Cream
1½ cups raw cashews
1 dragon fruit/pitaya (red flesh) or 1 PitayaPlus Packet
1 can full fat coconut milk (15 oz.)
3 tablespoons coconut oil, melted
½ cup maple syrup
1 tsp vanilla extract
pinch sea salt

To make the ice cream:
If using fresh a dragon fruit/pitaya, slice fruit in half and scoop out flesh into a high-speed blender.
Add cashews, coconut milk, coconut oil, maple syrup, vanilla extract and sea salt to the blender and blend until creamy and smooth.
Pour the ice cream mixture into an air-tight container.
Transfer ice cream to freezer overnight or until firm.
When ready to eat, allow the ice cream to thaw for about 10 minutes. This will allow you to easily scoop the ice cream. Enjoy!
