"Toasted coconut cake topped with sweetened whipped cream. Coconut cakes(and pies) have long been my favorite from childhood to now. When I saw this recipe in Now & Again by @turshen I knew it was a must make. The cake is a cross between a pound cake and an angel food cake, so it’s light and fluffy and yet still has substance too. Toasted coconut is added to the batter and tops the slightly sweetened whipped cream so it packs a great coconut flavor. Of course, I couldn’t resist adding some lime juice and zest to the batter. That meant that the song “you put the lime in the coconut” was totally in my head while this baked. This was absolutely delicious. This is my last post from this month’s pick for my #rainydaybitescookbookclub. I’ve made 14 recipes this month and every single one was a hit. I love that her recipes are straightforward, filled with helpful tips, and the leftover ideas were genius.
