Roasted Delicata Squash Crostini

"Happy Fri-YAY, friends! Another hearty squash dish for you because it's winter and I love carbs ? This maple roasted delicata squash crostini is an example of one of my go-to, easy weeknight dinners. Slather a hunk of bread in vegan @kitehillfoods cheese, add delicata squash (pre-roasted in olive oil & maple syrup), and top with @soomfoods tahini, hazelnuts, pomegranate jewels & fried sage. ? Since this meal is quick & easy, it's my contribution to my lovely friend @greensmoothiegourmet's #findingsavory party.   • 2 slices of bread, toasted
  • 1/4 cup vegan spreadable cheese
  • 1/2 cup pre-roasted Delicata squash rings
  • 2 tablespoons tahini
  • Pomegranate seeds, for garnish
  • Fried sage, for garnish


  • Step 1

    Top each slice of bread with 2 tablespoons of spreadable cheese. Add the squash rings on top, then garnish with tahini, pomegranate seeds and fried sage. Enjoy!
