"I call this my quarantine cake as it came out of wanting cake and having apples 🤷🏾‍♀️. Turns out I had everything I pretty much needed in the pantry! The only sugar I had was coconut which created this really rich colour and slightly more caramel/molases flavour which I loved for this cake. I did use more than I would with normal brown sugar as coconut sugar isn’t quite as sweet which makes it a great substitute for lower glycemic index diets, however my goal was flavour and not necessarily the benefits of using coconut sugar which is why I added more than I would when using brown sugar which helped me create this soft moist apple loaf cake 🤤"

ingredients

  • 2 1/2 cups all purpose flour
  • 2 cups coconut sugar
  • pinch of salt
  • 1 teaspoon cinnamon
  • 1 1/2 teaspoon baking soda
  • 1 cup plant milk of choice
  • 1/3 cup vegetable oil
  • 1 teaspoon vanilla extract
  • 1 tablespoon vinegar or lemon juice
  • 1/4 cup apple puree
  • 1 apple, peeled and finely chopped

Method

  • Step 1

    Preheat oven to 350°F

  • Step 2

    In a large bowl, sive flour, baking soda, cinnamon. Add a pinch of salt and mix the dry ingredients together.

  • Step 3

    In a separate bowl, mix together plant based milk, vegetable oil, sugar, vanilla extract, vinegar/lemon juice, and apple sauce to combine.

  • Step 4

    Add the chopped apples in with the wet ingredients. Combine the wet ingredients with the dry and gently mix together. Careful not to overwork the mixture but still combine all ingredients.

  • Step 5

    Place mixture into a prepared loaf tin and place in the oven for 45 minutes.

  • Step 6

    Insert a clean knife into the center of the cake. If the knife comes out clean, it's done. If it comes out gummy place it in the oven for another 10 minutes then check again. Once removed from oven, remove from loaf tin and allow to cool!
