ingredients
- 1 pounds chicken cutlets
- 1 1/2 cups Panko breadcrumbs
- 4 tablespoon grated fine Parmesan cheese; divided
- 3 1/4 teaspoon Italian seasoning; divided
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 teaspoon red pepper flakes; optional
- 2 eggs
- 2 tablespoon water
- 1/2 cup all-purpose flour
- 4 basil leaves; cut into thin strips
- 1/2 cup shredded mozzarella cheese
- 12 grape tomatoes; sliced in half
- cooking spray
Method
Step 1
Pre-heat oven to 375°
Breading Station - set out three bowls or trays
Step 1
BOWL #1 – flour
Step 2
BOWL #2 – eggs and water, whisked thoroughly
Step 3
BOWL #3 – Panko breadcrumbs, 3 Tbs of Parmesan cheese, 3 tsp Italian seasoning, salt, black pepper and red pepper flakes if using, mix to combine evenly
Breading the chicken
Step 1
One at a time, lightly season each piece of chicken with salt & pepper
Step 2
One piece at a time, thoroughly coat each piece of chicken in flour, then the egg and then the panko – press the panko into the chicken so it stays on well
Step 3
Place onto a lightly oiled wire rack on a baking sheet, cooking spray works the best
Step 4
Gently lift each piece of chicken and spray with cooking spray on both sides
Step 5
Top each piece of chicken with 1/4 each of the basil, mozzarella, the tomatoes
Step 6
Sprinkle each with some of the remaining Italian seasoning & Parmesan cheese
Step 7
Bake at 350°on center rack for about 30-35 minutes until golden brown and internal temp is 165° – time will vary depending on your oven and thickness of your chicken
