ingredients

  • 1 1/2 pound Fresh Tomatoes,
  • 2 tablespoons Red Onion, finely chopped
  • 1 Garlic Clove, minced
  • 2 tablespoons Good Extra Virgin Olive Oil + more for bread,
  • 3 tablespoons Fresh Basil, sliced
  • 1/2 tablespoon Fresh Oregano, finely chopped
  • Salt & Pepper, to taste
  • Good, Crusty Baguette,
  • Balsamic Glaze, optional

Method

  • Step 1

    Preheat oven to 350°

  • Step 2

    Prep Ingredients: Slice tomatoes in half & scoop out the seeds. Chop your tomato. Finely chop red onion. Mince garlic clove. Chop basil & oregano.

  • Step 3

    Make Bruschetta: In a small bowl, add all ingredients, olive oil, salt & pepper and let marinate while we focus on the bread! Set aside.

  • Step 4

    Toast Bread: Slice your baguette in diagonal, 1/2 inch thick slices. Brush one side lightly with your extra virgin olive oil. Place them olive oil side down on a baking sheet. Bake at 350 for 10 minutes while bruschetta mixture is still marinating. Serve as a dip or with a scoop on each slice. Drizzle with balsamic glaze if using!

    Things to Know: A GOOD extra virgin olive oil is worth the money. I only use it sparingly (on the recipes where the taste really enhances it) and try to make it last as long as I can.
