Vegan Rainbow Tacos

INGREDIENTS
Stir-fry:
1 red potato, chopped
2 small purple potatoes, chopped
2 chioggia beets, chopped
2 yellow beets, chopped
1 cup of white mushrooms, chopped
1/2 onion, chopped
3 garlic cloves, minced
1 Tbsp of cumin
Salt, to taste
Tacos:
Corn tortillas
Refried beans
Lime juice, to taste
Avocado
Pico de Gallo
1/2 onion, chopped
2 tomatoes, chopped
1/2 cucumber, chopped
1 cup of cilantro
1 purple jalapeno, chopped
1 tsp of cumin
1 tsp of coriander
1 tsp of oregano
Black pepper, to taste
Salt, to taste
DIRECTIONS
Saute stir fry ingredients in a saute pan, over medium high heat until vegetables are tender.
Assembles tacos and enjoy!
