Egg and Greens Breakfast Combo

  • 1/2 cup egg whites
  • Sea salt
  • pinch curry powder
  • Micro greens, for garnish
  • Black pepper, for garnish
  • Handful baby spinach
  • Handful baby kale
  • Olive oil
  • Crushed red pepper flakes
  • 1/4 avocado, sliced
  • 5 medium strawberries, quartered


  • Step 1

    Whisk egg whites with sea salt and curry powder. Heat lightly oiled pan over medium heat. Pour in eggs and slowly move around pan with wooden spoon until cooked through and scrambled. Transfer to plate and top with micro greens and black pepper.

  • Step 2

    Add olive oil to pan and sauté baby spinach and kale with crushed red pepper flakes until wilted. Transfer to plate with scrambled eggs.

  • Step 3

    Serve with avocado and strawberries.
