"Sushi Party for 2 I could happily eat sushi for the rest of my life Who else wants some? My mom arrived this afternoon and I made us some amazing sushi for dinner today! I haven't had sushi in 4 weeks because of traveling Went all out with the fillings - carrot, cucumber, bell pepper, tomato, avocado, rocket and zucchini "

1. Make sushi rice in a pot or a rice cooker. It is simply sushi rice and water with the appropriate ratio
2. While the sushi rice is cooking, cut your preferred vegetables into thin slices (here we have carrots, cucumbers, bell pepeppers, tomatoes, avocado)
3. Place a nori sheet onto a rolling mat
4. Take some rice and evenly spread it around the nori sheet, making sure to leave a thin gap along one vertical side for rolling up later
5. Place different vegetables on top of the rice, close to the edge
6. Gently start to roll up the nori sheet to create a sushi roll
7. When reaching the end of the rolling process, dip your fingers into water and wet the nori sheet that is not covered in rice. This will make the nori sheet stick while you finish the roll
8. Take a knife and carefully slice the sushi roll into individual pieces
9. Repeat steps 3-8 until all nori sheets have been used
10. Enjoy!
