Vegan Italian Style Lentils

  • 2 cups Lentils
  • 4 cups Water
  • 2 cloves Garlic
  • 1/12 cups Tomato sauce or vegetable broth
  • 2 Sprig Rosemary
  • 1 cups Baby carrots
  • To Taste Salt
  • Olive oil


  • Step 1

    Warm up olive oil and add garlic,carrots and rosemary.

  • Step 2

    When the garlic is well browned add the lentils and let them cook shortly in the oil.

  • Step 3

    Add the water and let cook for 15 or 20 minutes

  • Step 4

    Add the tomato (or vegetable broth) and salt to taste. Cook until they are done for approximately another 20 minutes adding more water if needed. In Italy they are served with cotechino for New Year. But I wanted this to be a vegan dish so I left it out.
