"Recipe of the Day: Paleo Fish Soup with Tomato, Sweet Potato and Spinach... One-pot comfort food in under 30 min. This came out even better than expected considering it was made on-the-fly with fridge remains! Use homemade fish stock if you have it. If not, use water... Here we go.
Recipe:
1) Add a few healthy glugs of evoo to a pot and sauté diced onion, celery, carrot, fennel and garlic until soft (approx 10min) - season with pinch of salt.
2) Season veggies with 1 tsp paprika and sauté for 1 more minute. Add in 2 large diced tomatoes, 1 diced sweet potato and 500ml fish stock (or sub water). Season with another pinch of salt, fresh cracked pepper and, if you have it, a few threads of saffron.
3) Cover partially and simmer over med-low heat for approx 15 minutes. Add in 6-8oz sliced wild-salmon filet (sub any boneless fish, or shellfish) and 2 handfuls fresh baby spinach and cook for 2-3 minutes until fish has poached and spinach has wilted.
4) Taste for seasoning, adjust if necessary and garnish with chopped fresh parsley."
