Oven Fried Chicken Thighs with Charred Broccoli and Garlic Honey Gochujang Sauce

Ingredients:

2 lbs boneless, skinless chicken thighs
6 garlic cloves, chopped
2 tbsp chopped fresh ginger
2 tbsp soy sauce
2 tbsp rice vinegar
2/3 cup honey
1 tbsp Gochujang
1 tsp corn starch
Panko breadcrumbs
Flour
3 eggs, beaten
1 head broccoli
Scallions and cilantro for garnish

Directions:

For the Chicken:

1. Preheat oven to 400 degrees
2. Bread the chicken with this three-step process: coat the chicken in flour (shake off excess), dip in beaten egg, and then coat with panko bread crumbs.
3. Place chicken on oven-safe dish and spray the top of the chicken with a canola or olive oil spray (this helps the chicken brown).
4. Bake for 15 - 20 minutes.
5. Once the chicken has baked for 15 - 20 minutes, turn on the broiler to finish browning the breadcrumbs. Broil until breadcrumbs are golden brown - about 2-4 minutes.

For the Broccoli:

1. Break broccoli into smaller florets
2. Place on oven-save dish and spray with canola or olive oil spray
3. In the last 10 minutes of chicken bake time, place broccoli in the oven
4. Finish the broccoli under the broiler until slightly charred

For the Sauce:

1. While baking, make sauce.
2. Combine garlic, ginger, rice vinegar, honey, soy, sauce, gochujang, and cornstarch in a small saucepan. Cook on medium-low heat until sauce thickens.

To Finish:

Drizzle sauce on top of chicken. Garnish with chopped scallions and cilantro. Enjoy!
