ingredients

  • nonstick cooking spray, for grilling
  • 12 Stock Yards USDA Choice Steak Burger, thawed
  • 1 pound (16 ounces) maple hickory-smoked bacon, thawed from frozen
  • 1 pound (16 ounces) cheese (e.g. colby jack, pepper jack, fresh mozzarella, etc.), thinly sliced
  • 12 brioche buns or burger buns of choice

For the Burger Bar:

  • red onion, thinly sliced
  • heirloom tomatoes, sliced
  • pickles
  • mashed avocado or guacamole
  • cilantro
  • basil
  • ketchup
  • mustard

Method

  • Step 1

    Prepare the grill: Preheat the grill for medium-high direct heat grilling, about 450℉

  • Step 2

    Cook the bacon: Place a heat-safe cast iron skillet directly on the grill grates. Add the bacon to the skillet. Cook 4-5 minutes per side, until the bacon is rendered & as crisp as you’d like. Carefully transfer to a paper towel-lined plate to drain excess oil. Set aside. (If you’d like to prep the bacon in advance, you can, of course, cook it on the stovetop or in the oven. My go-to is the oven. Arrange the bacon on a parchment-lined baking sheet. Bake at 375 degrees for 10-12 minutes, until rendered & as crisp as you’d like. Remove from the oven & transfer to a paper towel-lined plate to drain excess oil. Once cool enough to handle, transfer to an airtight container & store in the refrigerator for up to 3 days.)

  • Step 3

    Grill the steak burgers: Meanwhile, once the bacon is about halfway cooked, begin grilling the Stock Yards USDA Choice Steak Burgers. Just before placing the burger patties on the grill, generously spray a wad of paper towel with nonstick cooking spray. Use grilling tongs to run the oiled paper towel over the grill grates, generously oiling the grill grates. Place the burger patties on the prepared grill grates. Close the lid & grill 3 minutes per side for medium doneness. If you’d like to add cheese to your turkey burgers, do so when there are 2 minutes left of grilling time.

  • Step 4

    Toast the brioche buns: Halve the burger buns. Lightly spritz the cut side with nonstick cooking spray. Place the buns directly on the grill grates, grilling 90 seconds - 2 minutes, just until toasty. Keep a close eye on them to prevent burning – they toast very quickly!

  • Step 5

    Serve: Place the grilled burgers, cooked bacon, & toasted brioche buns on individual platters. Set up your burger bar by placing the platters on a table or serving station, along with your toppings & condiments of choice. Let your guests have fun building their own burgers.
