Kulfi is a frozen dessert from India similar to ice cream, but typically denser and creamier. This version is flavored with cardamom, saffron and pistachios for a dessert that’s as delicious as it is beautiful!

ingredients

  • 8 1/2 cups full fat milk
  • 3/4 cup sugar
  • 1 teaspoon cardamom powder
  • 20 strands saffron
  • 1/4 cup pistachios, chopped

Method

  • Step 1

    In a heavy-bottomed pan, over medium heat, cook the milk until its reduced to half. This will take around 25-30 minutes.

  • Step 2

    Add a 1 tablespoons of warm milk to a bowl with the saffron threads and crush it with mortar and pestle, or the end of a spoon until the color is released.

  • Step 3

    Keep stirring the milk to ensure it doesn't stick to the bottom of the pan. Add cardamom powder, sugar, saffron mix and stir. Cook for another 2-3 minutes.

  • Step 4

    Let the mix cool completely. Stir in pistachios.

  • Step 5

    Transfer top a pop mold or glasses and let it set overnight in the freezer to set for 7-8 hours. Remove from mold and enjoy.
