One Pan Paprika Tofu and Veggies

ingredients
- 16 ounces cubed tofu
- 1 tablespoon paprika
- 2 cloves garlic, peeled and minced
- 1 teaspoon dried thyme
- 1 teaspoon sea salt
- 1/2 teaspoon black pepper
- 3 tablespoons avocado oil
- 1 chopped yellow pepper
- 1 cup peeled and sliced yellow onion
- 4 cups green beans
Method
Step 1
Pre heat oven to 450 degree F and line a baking tray with baking paper.
Step 2
In a mixing bowl, add garlic, paprika, thyme, salt, pepper and 2/3 of the avocado oil. Whisk until combined.
Step 3
Add the cubed tofu into the bowl and toss well to coat. Transfer to the baking sheet.
Step 4
Add red onion, yellow capsicum and green beans to the same bowl and toss with remaining avocado oil. Transfer to a baking sheet and bake the tofu and veggies for 20 minutes.
Step 5
Serve on a bed of rice or quinoa and enjoy!
