ingredients

  • 2 medium peeled sweet potatoes
  • 1 1/2 cups black beans
  • 1 medium white onion
  • 1/4 cup buffalo sauce
  • 3 tablespoons chickpea flour
  • 2 tablespoons minced garlic
  • 3 tablespoons olive oil
  • 2 tablespoons onion powder
  • 1 tablespoon paprika
  • 1 teaspoon salt

Method

  • Step 1

    Preheat oven to 425 F.

  • Step 2

    Mix 3 tablespoons chickpea flour with 3 tablespoons water. Set aside.

  • Step 3

    Peel and chop the sweet potatoes into 1-inch cubes. Then boil the sweet potatoes for about 20 minutes or until they are just soft enough to stab with a fork. Avoid overcooking, as you don't want the sweet potatoes to be too soft or else the burgers won't hold together.

  • Step 4

    Once sweet potatoes are done cooking, boil the canned black beans for about 5 minutes to soften.

  • Step 5

    Then in a medium bowl, mash the sweet potatoes and black beans together.

  • Step 6

    Chop up the onion into small dices, and add that into the bowl. Mix well.

  • Step 7

    Add in the chickpea flour mixture, buffalo sauce, olive oil, salt, paprika, garlic, and onion powder.

  • Step 8

    Spray a baking sheet with olive oil. Then form the sweet potato mixture into 6 1-inch thick patties. Place on the baking sheet.

  • Step 9

    Bake for 25 minutes, flip, then bake for another 25 minutes. Serve and enjoy!
