ingredients

  • 1/4 cup olive oil
  • 2 chopped yellow onions
  • 3 diced carrots
  • 1 chopped head of celery with leafy tops
  • 3 large bay leaves
  • 1/2 teaspoon celery seed
  • 1 teaspoon dried Italian seasoning
  • 1 teaspoon dried thyme
  • 2 salt (or to taste)
  • finely ground black pepper, to taste
  • 2 cups dried split pease, checked carefully for debris and rinsed
  • 8 cups water
  • 6 cubes vegetable bouillon
  • 1/4 cup Italian Parsley roughly chopped, for garnish

Method

  • Step 1

    In a large stockpot, heat the olive oil over medium heat. When the oil is hot, add the onions and cook for 10 minutes.

  • Step 2

    When the onions are tender, add all of the vegetables and spices (everything except the split peas, water, and broth) and cook for 10 to 15 minutes.

  • Step 3

    Add the split peas, water, and bouillon cubes. Cook covered with a lid on low heat for 35 to 45 minutes.

  • Step 4

    Serve hot, garnished with Italian parsley.
