Slow Friday mornings. A rainy day calls for sleeping in and making pancakes! These were meant to be the average three ingredient pancakes (oats, banana, plant milk) but I only had 1/2 cup oats so I decided to add 1/2 cup quinoa flakes to the mix and I’m so glad I did. Banana Oat Pancakes with Quinoa Flakes

Cook time 5mins
Yield: Serves or Makes 2
Add ingredients directly to your favorite online grocery cart (where available).
- 1/2 cup rolled oats
- 1/2 cup quinoa flakes
- 1 medium ripe banana
- 3/4 cup plant milk
- Berries and nut butter, for garnish
Blend all your ingredients together in a bowl or blender.
Spoon batter onto a non stick pan and cook for 2 minutes on each side.
Top with fresh berries, nut butter and serve.
