ingredients
- 3 cups all purpose flour
- 3 1/2 teaspoons Salt
- 4 1/2 cups Buttermilk
- 2 large Eggs
- 2/3 cups Vegetable oil
- 1/2 cups shredded cheese
- 6 teaspoon divided spice mix of choice
- 3/4 teaspoons Baking Soda
- 1/4 cups Cornmeal ( Yellow)
- 3 Serrano Peppers
- 2 minced Garlic Cloves
- 1/4 cups Vegetable oil
- 10 Chicken Thighs ( Bone in, Skin on)
- 1/3 cups Cornstarch
- 1/2 cups Maple Syrup
- 2 tablespoons Honey
- 2 teaspoons Cayanne Pepper Flakes
- Sriracha Sauce ( to taste)
Method
Step 1
CHICKEN: Blend Serrano peppers, garlic cloves and oil Mix buttermilk, Serrano garlic blend and salt to taste Taste Marinade to ensure salt is to taste! Marinate chicken ( 12 hours to overnight. I prefer overnight) Once marinated time to cook!!! heat about 1 inch of oil in pan While oil is heating mix breading ingredients Bread chicken ( bread chicken in batches depending on how many can fit in your pan without overcrowding) Fry chicken till golden brown. Put it on a rack to drain once cooked. Do not put it on paper towel. It will get soggy!
Step 2
WAFFLES: 6 WAFFLES Warm Waffle Iron! Combine dry ingredients in a bowl, whisk together and set aside In another bowl mix wet ingredients and whisk together Add wet to dry ingredients and mix until smooth Once smooth fold in the cheese of your choice Once iron is warm make your waffles!!!!
Step 3
SPICY SYRUP: Combine all syrup ingredient in microwave safe bowl or small pot Heat in microwave or pot for a couple minutes and remove from heat Set aside and allow to cool
