ingredients

  • 500 g Long Grain Rice or Persian Rice
  • 2 pinches Saffron
  • 20 g Butter
  • 1 pinch Salt
  • 1 tbsp Sugar
  • 1 handfull dried Barberries

Method

  • Step 1

    Wash the rice to remove the starch.

  • Step 2

    Melt the butter with the saffron and 3 tbsp water in a small pot. Use a well-coated pot and brush with some butter. Add the rice and punch holes into it with the end of a wooden spoon.

  • Step 3

    Pour the butter-saffron mixture into these holes. Then pour 200 ml water into the pan. Wrap the pan lid with a kitchen towel and cover the pan. So, no steam can escape! Now cook the rice without ever opening the lid for 30 minutes on small heat, until the crust is built.

  • Step 4

    Quickly rinse the barberries and roast them in a small pot together with the sugar and pinch of salt. Turn the rice cake over onto a plate and decorate with the cooked berries, serve immediately!

  • Step 5

    Traditionally the rice cake is cut like a cake! It is perfect to grilled meats as well as stews.
