ingredients
- 100 g ground Almonds
- 100 g desiccated Coconut
- 180 g Sugar
- 1 pinch Salt
- 70 g Egg-white
- 1/2 teaspoon Lemon Juice
- 1 teaspoon Almond Extract
- Icing Sugar
Method
Step 1
First pre-heat a baking tray, lined with baking paper in the oven at 140 C. By heating the tray, the cookies will keep their shape and do not spread.
Step 2
Mix the almonds with the coconut, sugar, and the pinch of salt. Beat the egg-white with the lemon juice until stiff. Then add the almond extract.
Step 3
Mix the dry and the wet ingredients together and knead to a crumbly dough.
Step 4
Then form little balls with this mass, roll them in the icing sugar and put them onto the heated baking tray. Bake in the oven for 25-30 minutes.
