Rum Balls

ingredients

  • 10 medjool dates
  • 1 cup blanched almond meal almond meal
  • 1/2 cup desiccated coconut
  • 1/4 cup coconut flour
  • 1/2 cup cacao powder
  • 2 tablespoon rum
  • 2 tablespoon water
  • 2 tablespoon melted extra virgin coconut oil

Method

  • Step 1

    Remove seeds from medjool dates and place in a high powered food processor.

  • Step 2

    Add all remaining ingredients to the food processor and blend on high until very well combined. Continue to blend until mixture clumps together into a ball as it goes around the drum of the food processor.

  • Step 3

    Take a spoonful of mixture, roll into a ball and then roll ball in shredded coconut. Continue until all of the mixture has been rolled into balls.

  • Step 4

    Store in the fridge until ready to eat. These rum balls freeze well if wanting to make in advance. Freeze for 1-2 weeks.
