But since having Dean, I’ve changed my tune! Each minute of nap time that I have to make dinner is SO precious (I’ve become the speediest cook) and I’d rather spend the time to ummmm toast cubes of sourdough in bacon fat? Annie’s is one of my go to brands because the ingredients are simple and organic. Their Goddess Dressing mixed with peak-summer local produce I’m getting from @wholefoods right now makes something pretty special come together super quick; Annie's Dressings are 2/$6 at Whole Foods from 8/12-8/25. ingredients

  • 8 ounces bacon, cut into 1” pieces
  • 1/2 loaf of sourdough, cut or torn into large cubes (about 4 - 5 cups)
  • 2 pounds tomato, cut into bite sized pieces
  • 1 shallot, thinly sliced
  • 1/2 cup Annie's Organic Goddess Dressing
  • 1 teaspoon Kosher salt
  • 4 cups chopped lettuce (romaine, iceberg or arugula)
  • A handful of torn up herbs like basil and dill

Method

  • Step 1

    Heat a large skillet over medium heat. Add the bacon and cook until crispy, about 6-8 minutes. Using a slotted spoon, transfer the crispy bacon to a plate and leave the drippings in the pan.

  • Step 2

    Add the cubed bread to the pan. Cook the bread, tossing often until all the cubes are toasty and golden brown. Turn off the heat and let the croutons cool down.

  • Step 3

    Toss the tomatoes and shallot in a serving bowl with Annie's Goddess Dressing and salt. Add in the croutons and give everything another toss. Let the salad sit for 10 minutes before serving to allow everything to absorb some of the dressing.

  • Step 4

    Toss the salad with the lettuce and top with the crispy bacon and herbs before serving.
