"Vegan, Gluten Free Carrot Cake Loaf! Happy Friday! I decided I needed a pumpkin spice break and baked this loaf last night. It was super easy to make and turned out so moist and flavorful! It makes for a great breakfast as well!"

ingredients

  • 2 flax eggs ( 2 tbsp ground flaxseed meal + 5 tbsp water)
  • 3/4 cup apple sauce
  • 1/4 cup coconut oil
  • 1/2 cup almond milk
  • 1/3 cup coconut sugar
  • 1 teaspoon Simply Organic vanilla extract
  • 1 1/2 cups gluten-free oat flour
  • 1/2 cup gluten free flour
  • 1 1/2 teaspoon cinnamon
  • 1 teaspoon nutmeg
  • 1 tablespoon baking powder
  • 1/4 teaspoon salt
  • 1 cup grated carrots
  • 1/3 cup walnuts, optional
  • Granola, as garnish

Method

  • Step 1

    Preheat the oven to 350℉ and grease a 9” x 5” loaf pan with non-stick cooking spray.

  • Step 2

    In a large bowl, mix the Flac egg with applesauce and coconut oil. Then, add the almond milk, coconut usage, and vanilla extract. Mix well until combined.

  • Step 3

    To the liquid mixture add oat flour, gluten-free flour, cinnamon, nutmeg, baking powder, salt, and grated carrots. Mix well, then stir in the walnuts.

  • Step 4

    Pour the batter into the prepared pan and top with more walnuts and granola. Bake for 1 hour or until a toothpick inserted into the center of the cake comes out clean.
