Whip up a batch of these soft and fluffy vegan Biscoff rolls in no time. Unlike traditional rolls, these require no yeast or rising time. They're filled with a mouthwatering Biscoff cookie butter spread and topped with melted Biscoff and crushed Biscoff cookies for an extra layer of flavor and crunch.

ingredients

  • 1 1/2 cups all-purpose flour, plus more for kneading
  • 2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 1 cup vegan Greek style yogurt
  • 3/4-1 cup Biscoff/cookie butter spread, plus more for drizzling
  • 2 Biscoff cookies, crushed (optional)

Method

  • Step 1

    In a large bowl, add the flour, baking powder, and salt. Stir to combine. Add the yogurt and mix. Then use your hands and knead the dough directly in the bowl into a rough ball shape. Generously flour a clean surface and dump dough onto it.

  • Step 2

    Knead with plenty of flour until the dough comes together and it isn’t sticky anymore (you might need to use almost an extra 1/2 cup of flour depending on what yogurt you used).

  • Step 3

    Flour your surface and roll dough out into a rectangle (about 1/2 inch thick). Evenly spread biscoff or cookie butter on top. From the long end, roll dough up and slice into 12 pieces.

  • Step 4

    Place in the prepared pan and bake for 25 minutes or until lightly golden. Let it cool for 10 minutes. Microwave 2 Tbsp of biscoff for 20 seconds. Drizzle it on top of the rolls and sprinkle crushed biscoff cookies on top if desired. Enjoy warm!
