One Pot Mexican Mango Quinoa

INGREDIENTS
1/2 cup quinoa, uncooked
2 bell peppers
1/2 onion
1-2 roma tomatoes
1 lime
1 tsp cumin
1/2 tsp cayenne or chili powder
1/4 cup cilantro
1 avocado
1 ripe mango


DIRECTIONS
Sauté onion and bell peppers in butter or coconut oil until tender. Remove from pan. Add quinoa and water and simmer until cooked, about ten minutes. Add peppers and onions back to pan and add lime, cumin, spices and simmer.

Top with cilantro, lime, mango and avocado and serve on bowls or with corn tortilla chips. Bon appetit!
